WHICH ARE THE RIGHT ANTIOXIDANTS FOR YOU? VITAMIN E, VITAMIN C AND B2. Some trace elements such as SELENIUM, ZINC AND COPPER. In the plant kingdom there are also thousands of compounds with antioxidant activity. These substances belong to various types of chemical molecules; among them the most important are POLYPHENOLS AND CAROTENOIDS (which in the plant perform mechanism of defense against environmental stress and pathogens). In humans, FRUITS AND VEGETABLES are the main dietary source of POLYPHENOLS. Among the most studied substances there are the anthocyanins and procyanidins of BLUEBERRY, the delphinidin, the catechins of TEA, the epigallo-catechin-3-gallate, a stilbene contained in GRAPES and in PEANUTS, resveratrol, the yellow pigment that gives color to the curry derived from tumerico, the CURCUMIN. The polyphenols content in OLIVE OIL, able to prevent the oxidation of LDL in plasma. Finally, CAROTENOIDS are a group of lipophilic molecules of vegetable origin, which includes compounds such as lycopene, lutein, zeaxanthin and beta-carotene in particular, a provitamin A. In general, carotenoids are efficient chemicals antioxidants, thanks to their action of “scavenger” (literally scavengers of free radicals). Numerous studies have shown a correlation between a diet rich in carotenoids and the reduction of various types of degenerative diseases of aging.
