Pasta Catalogue 2015

The Company

The artisanal pasta workshop “La Fraiola”, was established in December 1985 from an idea of Cimaroli Brothers, Ade-lina and Mario.

The workshop is located in Avezzano (Abruzzo), country town of Marsica region of the unbowed “Marsi” warriors.

Over the year, thanks to the opening of a small shop of fresh pasta, the family run business has been known, even outside the area, for its quality and outhenticity products, as well as for the original and local recipes.

In 2007, in addition to the �rts shop, the company set up a big workshop in order to make fresh and dry pasta adop-ting the most innovative technologies, like that one so called “Mono-process”. Pasta’s process techinique has been changed bicause, through this new technique (mono-process), it is possible to get di�erent and variable thickness for pasta with only one or two steps.

This allows to keep and maintain not only raw ingredients quality, but also facilitate a better cooking, better orga-noleptic quality, gluey’s absence and cold-working. All this is the right mix to create a tasteful coloured pastas, unique in their kind.

Nowday the sta� is proud of the result achieved, but they represent only the beginning. Next objective is to spread, within the country and also outside Italian borders, passion and quality that mark out artisanal pasta workshop.
