  • I have just returned from a

    very brief trip to Johannesburg and, as much as I love the energy and the action in that city of steel, smoke and mirrors, I am relieved to be back in Ballito again.

    But this trip was different because although we were 600km away, we were listening to Radio Life & Style on streaming audio while we were up there so it felt as if we were still connected! This is a common phenomenon among many who live in distant parts but share a connection to the KZN North coast and by all accounts our national and international listener count is increasing rapidly.

    But its our local listenership that is really exciting. Although there is no way of formally measuring this yet, advertisers who have tested the response from advertising on Radio Life and Style against the traditional established local media have been convinced by the results and after all, its results that count.

    In another interesting development, our motoring correspondent, Anton von Allerman confirms that most local cars coming in to his service centre are tuned to 88.0fm thats good to know!

    While I am overjoyed at how effective Radio Life and Style is becoming as an advertising medium, I am not really surprised. Located where we are in the Lifestyle Centre in Ballito we have a regular stream of shoppers passing by the large glass windows to our studio. We have been thrilled by the people from all walks of life who continue to pop in to say how much they are enjoying the format of our station.

    Its the mix of the old familiar songs that have until recently all but disappeared from the local airwaves, together with new music hot off the international release platforms that people are responding to. This, plus the mix of local personalities who contribute to shows with sports features, surf and fishing reports, motoring, property, health, legal, medical, financial, style and other trending topics regularly throughout the week.

    Our News You Can Use slots are working well and we are keeping our listeners regularly up to date with the vagaries of load shedding changes, local traffic situations, emergency interventions, roadwork updates as well as social events, specials, and general info of interest to the greater Ballito community.     I just thought I would drop you a mail with a big shout out and thanks for what you and your team at Life & Style are doing in this community.

    If building Brand Ballito was ever at a defining point, it is now, and it couldnt be in the hands of a better media team to take us there.

    Ballito as you know, is the darling of Kwa Zulu Natal and the passion of many and I give thanks that at such a critical point in our evolution, a local radio station would materialize, to provide a voice for so many.

    Whilst I enjoy print media and believe its an effective form of communication, I feel Life & Style Radio will reinvigorated our community, revitalize our passions and stimulate creativity.

    Life is beautiful on the North Coast and after 34 years in this area, I can count

    myself as truly blessed!Sure we all have work to do to build

    this special brand, but with your solid mix of blazing classics and funky contemporary pieces, the mood looks set for success!

    It is indeed all about Life and Style, and somehow many of us captured the amusing letter from yours in radio, Manga Thabane. Somehow, I knew that the Boksburg boytjie with a BBC accent would not rise to the bait. Talking of Boksburg, it seems to have become rather famous of late for reasons that most of us know, and wow, I have actually been there. In fact to laugh or to chuckle is said to be the medicine of life. This is precisely part of the interesting and unique passage of life, and it is exciting to see that the sparkle of democracy shines through from time to time, and that we can rightly or wrongly freely express our views and opinions.

    However, what is important above Mangas opinion, is that Radio Life and Style is own very own local Radio Station which is embraced by its community and beyond. Having lived in the area most of my life, the introduction of our own Radio Station is certainly revolutionary and a mile stone in the history of Ballito, and this does indeed make us happy and very proud.

    We always knew that 2015 was going to be a big year. It is

    incredible that we are now at the end of February and so much has already happened. Every alternate February creates a good deal of excitement as we prepare to host Lewes Old Grammar School (503 years old) and this year Mr Rob Blewitt and his team

    came come across from the UK with 50 students of various ages. Their visit included a Sport Day and an opportunity to see KZN in its natural beauty. We travel to Lewes for a similar visit every other year.

    This year LOGS spent some time down on the South Coast at Pumula Beach Hotel and probably one of their biggest highlights was their river rafting in the Oribi Gorge. They also spent time at the Wild Coast Sun Waterpark, visited the Cheetah Rehabilitation Centre and Crocworld and they were treated

    to Game Drives up North at the Thembe Elephant Park. This recipical tour has been a catalyst for a good number of friendships amongst both students and parents which will be treasured for a lifetime.

    Returning to school life, we have adopted the theme for 2015 around the Family and doing things the Ashton Way. Even though our school has grown, we essentially encourage traditional family values and readily adopt our Christian Ethos. Throughout the whole school from the age of 3 to 18, we engender a holistic value driven structure

    which encompasses excellent standards and embodies our key words Heart, Spirit, Character and Courage (HSCC). I was amazed with the following statistic - over the past five years we have had a total of 110 Provincial representatives in various disciplines. That is a phenomenal figure, bearing in mind that we are still a young school. This is a true indication of the level of commitment and potential of our students. We currently have 5 students who are representing their country at National level.

    Recently, 3 of our girls were chosen for KZN Youth Choir and will be touring overseas in the near future. We are also currently hosting a cricket team from West Glamorgan United Kingdom.

    On the 20th March, we will once again be taking our Matrics on their annual Cruise to the Portuguese Island. This is a highlight for every Matric year. On the same day our Senior College boys will be embarking on a two week Holland Hockey Tour to the Netherlands.

    So, life at ashton is extremely busy on all fronts Academics, Sports & Culture.

    I would like to extend an open invitation to any prospective parents and students to come along and meet the Ashton Family and see how things are done the Ashton way!

    method: Heat 15ml of the oil in a large frying

    pan and fry the eggs. They should be

    remaining oil in a wok or a heavy-bottomed frying pan, when hot but not smoking, add the chicken, shrimps, chillies, garlic, chives and spring onions. Stir fry quickly until the chicken is cooked and has turned white, 5 minutes. Add the cold cooked rice, followed by soy sauce, tomato sauce and seasonings. Stir fry, combining everything quickly, stirring continuously to prevent the mixture

    from sticking together. Taste and adjust the seasoning. Fold in the raw baby spinach leaves. Transfer to a serving platter. Garnish with fresh black pepper and arrange the eggs on top. Serve with Prawn Crackers.Serves 4

    My favourite place to eat Crab is at the world famous Clarke Quay in Singapore. Restaurants line the waters edge and sell live crabs in every size. The menu is simple; choose your crab, weight your crab, and then decide if it is going to be Pepper or Chilli Crab tonight. Tip: Most large supermarkets sell frozen crab cleaned and ready for the pot. However should you be using fresh crab remember to follow the instructions below carefully for cleaning.Use any Asian Chilli, or Sweet Thai Chilli Sauce for the Chilli called for in this recipe.

    Ingredients2 medium-sized raw crabs125ml ( cup) peanut or canola oil15ml (1 tablespoon) freshly grated ginger3 - 4 cloves of garlic, crushed

    2- 4 red chillies, seeded and finely chopped90ml (6 tablespoons) tomato sauce90ml (6 tablespoons) chilli sauce 62ml (1/4 cup) water 15ml (1 tablespoon) soft Brown sugar or Palm sugar15ml (1 tablespoon) light soy sauce15ml (1 tablespoon) fish sauce3 spring onions for garnish (optional)

    method: Wash the crabs, remove the hardtop shell and clean out any Stomach bag or tissue. Use a meat cleaver or very large kitchen knife to chop each crab into four or more pieces. Heat oil in a wok until hot, but not smoking. Fry the crab until the

    Nasi Goreng is the staple of just about every Balinese. I think I ate this humble rice dish at least once a day while patrolling the emerald hills on my bike in search of the perfect rice paddy to paint. Tip: This is a great way to use up left over rice. Ensure the rice is cold before proceeding. Substitute

    sliced beef or pork for chicken. Many restaurants in Bali serve Nasi Goreng the way I prefer, with a soft fried or poached egg on top of the rice instead of the traditional omelette. The combination of runny yolk and spicy rice is unforgettable. Just before I serve, I like to add packet of baby spinach. This ensures the simple dish is a feast for the eyes and adds additional texture. Tip: The Shrimps used in Asian cooking are the type we would use for a good old-fashioned

    shrimp cocktail. In some recipes when they call for shrimps they actually mean prawns. Use your discretion when cooking from a foreign cook book to assess if you need shrimp or prawn. Tinned Shrimps are widely available at Supermarkets.

    shells start to change colour, turning frequently so that they are evenly cooked. Remove and set aside. Reduce the heat to low, add ginger, garlic and chillies. Saut until soft but not browned. Add the tomato sauce, chilli sauce, water, brown sugar, light soy sauce and fish sauce. Return the cooked crab to the wok and simmer gently for a few minutes. Or until the sauce reduces coats the crab. It should be tangy and thick. Transfer to a serving platter. Garnish with chopped spring onion.Serve at once. Serves 4.

    Vegetables - While kale will still be trending cauliflower will appear in everything. Previously disregarded for its lack of flavour, it is this exact

    characteristic that makes it so popular. Florets will be crumbled and cooked like rice or couscous, mashed into a paste instead of potato, and cut into

    chunks and served as steak.Root vegetables like celery root, parsnips and kohlrabi will come grated,

    fried, mashed or pureed. The much-maligned Brussels sprout will also be plated up after finally being recognised as a superfood.

    Fermented vegetables such as Korean kimchi will gain popularity. Seaweed, which has been used in soups and stews for its savoury umami quality, will move from sushi and into salad territory.

    Meats - On the whole we will move away from bacon but still continue our love affair with pork. Italian products like pancetta, guanciale (Italian

    cured pork made from pork cheek or jowls) and 'ndjua spreadable sausage made from the shoulder, belly and jowl, as well as tripe, roasted peppers

    and a mixture of spices - will appear on plates and in sauces.

    UnUsUal cUts of steak coulotte slabs, tri-tip from the sirloin and teres major from the shoulder will become more common. Steaks will also

    be dry aged for longer.

    The Beauty Therapy Chocolate to 'Smooth Wrinkles, Increase Blood Flow and Help Skin Look Radiant'

    ChOCOLaTe has traditionally been a bit naughty... but nice.

    Now, however, it could have another benefit after

    scientists claim to have created the first beauty chocolate.

    The sweet treat will apparently smooth wrinkles, increase blood flow and help skin look radiant. +2

    Its creators claim eating one 7.5g bar a day of Esthechoc will have visible effects within just three weeks.

    The beauty claims come from its high levels of two antioxidants. Esthechoc is also only 38 calories per bar with a cocoa content of 72 per cent.

    However, it may fail to satisfy chocoholics as a bar is equivalent to just one square from a 45g bar of Cadburys Dairy Milk, which weighs in at 240 calories.

    Esthechoc was developed from research originating at Cambridge University and will be unveiled at next months Global Food Innovation Summit in London.

    The makers, Cambridge-based Lycotec, claim one 7.5g

    bar contains as much anti-inflammatory astaxanthin as a 300g serving of salmon.

    It also has as much flavanol, an antioxidant linked to cutting bad cholesterol, as 100g of dark chocolate.

    A 7.5g chunk of dark chocolate would have only a 13th of Esthechocs volume of flavonoids.

    Cambridge Chocolate Technologies, a spin-off firm which will market the chocolate, claims that volunteers in their 50s and 60s showed signs of health improvement in clinical trials.

    After three weeks, they had improved blood supply to the skin and subcutaneous fat. This boosted oxygen to the skin and improved respiration.

    The chocolate is due to be stocked in Britain by a prestigious but unnamed retailer, the firm said. The price has yet to be revealed.

    A spokesman said it was the outcome of a decade of research and trials involving more than 3,000 volunteers.

    He described it as an exquisite functional dark chocolate enriched with powerful plant extracts.

    But Professor Naveed Sattar, of Glasgow University, said more robust trials were needed to validate the ridiculously strong claims.

    He added: Eating too much chocolate means more calories, which means obesity.

    I'M sure you've seen them in the gym, that blue cylinder shaped foam thingy. Sometimes you see people do some funny rolling

    type of exercises on it. But what does it actually do? Shouldn't you be doing it too?

    Athletes understand the benefits of massage, especially a deep tissue sports massage. Most top sports teams, from rugby to cycling all make use of masseurs for a number of reasons of which recovery and getting rid of spasms and knots in the muscles are foremost. Some top rugby teams even reward their players with points on an app to make sure that they do everything in their power to recover quicker. In the words of Lance Armstrong, "whoever recovers the quickest, wins the race" (we won't mention the lengths he went to for recovery).So why use a foam roller?

    Foam Rolling also known as Trigger Point Therapy or Myofacial Compression Techniques are all ways to what I like to call "DIY Massaging" if done correctly. Simply put, it's the poor man's massage.

    Unfortunately, I see most people using these rollers incorrectly, usually by working way to fast.

    When starting off, foam rolling can be extremely painful and that is one of the main reasons why a person would rush through it or avoid it all together. But it doesn't have to be. Once you understand the fundamentals and practice proper foam rolling techniques, you will be amazed by the results.

    What is Myofacia?Deep fascia tissues which surrounds

    and penetrates our muscles are referred to as Myofacia.

    Myofacia are highly innervated by nerves and play a significant role in

    joint stability and kinesthetic awareness. They move

    independently from the muscle and

    lack extensibility which ensures that muscles remain in proper alignment, and limits undue

    stress on our joints. Myofacia

    are composed of three sublayers of varying

    orientation and density of collagen fibres that rotate 70 - 80 degrees from one another. They contains cells that secrete an acidic substance that lubricates the interface between layers.

    Fundamentals of Trigger Points

    When myofacia become inflamed or injured a Myofacial Trigger Point commonly known as a knot, can be the result. It's a spot in the muscle that can be sensitive or even feel like a taught band. This can lead to inflammation and can eventually lead to thickening of the fascia which results in irritation. A Myofacial Trigger Point affects how the muscle feels and moves.

    Learning to foam roll properly can help speed the process of recovery and may even minimise the need for professional therapeutic assistance.

    I have been asked to get back to basics with a start-up marketing plan for entrepreneurs. The following tips will yield the best

    results if done in numerical order.

    1. Rethink the businessTake a long, hard look at your

    business; the market you have chosen to compete in, your industry, the current trends, your competition, distribution channels and even technology. Will

    the choices you have made give your business the best possible chance to succeed? If you can get your finger on the pulse of your business, you are more easily able to move with the times by acting accordingly.

    2. assess the statusPut everything on the table including

    the things you have implemented that have worked and not worked as well as the things you still plan to implement. Ask yourself what you should start,

    stop or continue doing in your business.

    3. Keep some change some

    Work through your assessment and decide what to keep due to its success, as well as what you plan to implement because of its congruency with the current activities.
