Laboratory evaluation of Culinar Prima 320 (E1422) compared with waxy maize starch (E1422)
► Recipe (Czech standard):
► 19% Tomato pureé (37°Brix)
► 3,2% Modified starch
1. sample: Waxy maize starch (E1422) = Referent sample 2.sample: Culinar Prima 320
► Used acidifier: 19% vinegar
► Production process: all ingredience mixed by hand mixer into smooth homogenous matter. Cook while stirring till 85°C, packaging.
► Used device: Thermomix (Vorwerk)
► Time: 5 min from begining to attain 85°C and let another 5 min, while stirring

► Microscopic evaluation: According to these pictures the both samples are well cooked
► Sensoric analysis: ketchup with thicker consistency
► 1.sample – Waxy maize starch E1422 (referent sample) – shiny smooth consistency, no water releasing
► 2.sample – Culinar Prima 320 – in comparison with referent sample less shiny, smoother consistency in a close view but very similar in general, no water releasing

Recipe of less viscous ketchup:
► 14,5% Tomato pureé (36°Brix)
► 2,3% Modified starch
1.sample: Waxy maize (E1422) = Referent sample
2.sample: Culinar Prima 320
► Used acidifier: citric acid
► Production process: all ingredience mixed by hand mixer into smooth homogenous matter. Cook while stirring till 85°C, packaging.
► Used device: Thermomix (Vorwerk)
► Time: 5 min from begining to attain 85°C, and let another 5 min while stirring
► Evaluation: 5 days after laboratory production, storage in room temperature

Final evaluation:
► Next step of testing: observation of all mentioned samples stored in room temperature and final evaluation after 9 months
► Results: There is no water releasing and no consistency change in tested samples of Culinar Prima 320 in both tested recipes - it means all samples correspond to referent sample with waxy maize starch content
► This product is very convenient for use in ketchup application
and gives similar product compare with waxy maize starch.
