You’ll already find Diesel jeans and plenty of Vans footwear in my wardrobe, but I loved the looks I modelled for Selfridges, and was surprised by the quality of the fashion. The look is country-style with a bit of an edge to it, jackets with elbow patches and check shirts. I wouldn’t normally have this type of look in my wardrobe but as soon as the stylist put it on, I liked it, and would invest in it for myself. The knitwear was very cool.

Everyone wants to be comfortable in what they wear. Although I probably

do sacrifice a bit of comfort sometimes just to get the look that I want: sometimes jeans can be a little bit tighter than you want them to be! I’m not all about comfort when it comes down to fashion if I’m looking to achieve a particular look. My usual daytime look is Diesel jeans, Ted Baker tee-shirt and a Ted Baker hoodie.

I’ve always been into fashion, and it’s important to me. I follow trends, and I know lots of different stylists in London and – since I moved from Tottenham to Aston Villa on loan last year - Birmingham, who try and keep me as up

to date as possible. As well as watching music videos and looking at magazine photoshoots, I pick out certain things that I like that fit my style: I try to sit in between following trends and wearing what suits me.

A good watch is a statement: I wear a gold Rolex. I’m not big on accessories, though. I wear scarves, sunglasses, hats and gloves but it’s no to a man-bag! Only time I carry a bag is for sports when I need my toiletries, or when I’m looking after my daughter who seems to have mountains of stuff.

I like designer labels. I love shopping in Selfridges and Harvey Nichols, and when it comes to labels, Dolce & Gabbana is a favourite. I’m quite a slim build so their clothes really work for me, and their suits and shirts always fit me perfectly. I’m also a fan of All Saints for nice leather, and Diesel is always good for a great pair of denim jeans. I’m a fan of Tom Ford as well, he always creates really stylish clothes.

I enjoy a good suit. Ozwald Boateng in London does a lot of

my suits, when I’m splashing the cash! I have to have my suits completely fitted, so they are made to measure and they already have my size.

I don’t have style icons. I’m not influenced by any celebrities or sportsmen. With fashion I’ve always put myself out there a little bit, put some crazy stuff on and my wife has often said ‘are you sure about that?’, but fashion, to me, is just about how I feel. Even Becks – a global style icon - has made a few mistakes over the years but he always looks great. My wife is my go-to person for an opinion because she’s always honest.

Fashion mistakes? I’ve made a few. I remember a leather jacket I bought in New York, it was crazy even at the time. I used to love Usher when I was younger and saw this jacket in a music video. It was by Christian Dior, with loads of zips on it and bits and bobs. I bought it and have never worn it. Still, at least it wasn’t a pair of leather trousers! That leather jacket is still in my wardrobe and I still sometimes contemplate wearing it.

This photoshoot is completely different to clothes I’d normally wear but it’s good to try new looks. I love the Ben Sherman chinos with brown shoes, and the denim shirt: I’d consider taking these with me when we go to Dubai for England’s tour in January.

Being an athlete, comfort is important. Playing cricket, we’re often on tour in hot climates so I’m always in Adidas white trainers, shorts and tees, and in summer evenings, I go for loose-fitting jeans with an open check shirt and a tee underneath.

I’m not the most daring when it comes to fashion. I wear

what’s comfortable, but I do

try and stay as fashionable

as possible. I shop at Harvey

Nichols and Selfridges but

I don’t follow trends, or like

accessories. I do love a good

pair of trainers though: I’m

happy in a pair of y3 or Adidas.

Also, I’ve currently got my eye

on the range of slim-fit jackets

from Kooples: that’s probably

my next purchase.

I collect watches, they are a guilty pleasure of mine. My

everyday one is by Jacobs &

Co, but I have two others, by

Breitling and Cartier. If money

were no object, I still wouldn’t

splash it on fashion: a yacht

would be top of my list!

Carole Marsh, 50Billowing, super-long sleeves were featured in Stella McCartney’s autumn/winter collection, and are a must-have if you plan to wear chunky layers underneath your coat. Carole’s coat works hard for the money; she can stay glove-free in the chilly winds thanks to the bell cuffs, and who needs a scarf when you’ve a faux fur collar on your coat like this one?

Gemma Butwell, 25Gemma’s faux fur jacket is a great nod to the 70s trend that Just Cavalli covered on its autumn/winter catwalk, with several long haired coats making an appearance. Teamed with tumbling blonde tresses and purple suede platform boots, she’s added a welcome hippy vibe to winter.

Gemma Dunn, 26Gemma has turned to the dark side with designer armour to protect her against the elements: it’s a case of black is best for her Gucci gloves and bag, furry earmuffs and her on-trend, belted at the waist jacket. Her shimmering gold Louis Vuitton shawl is the only colour she needed to add, while the long tassels on the back of her heeled boots add whimsy.

Central heating can be very drying to the skin and

make it feel tight and uncomfortable, as it draws all the natural moisture and oil from the skin’s surface. Wearing a moisturiser is key, and during the winter months switch up to a richer cream to nourish, replenish and protect the skin against external aggressors such as central heating, air conditioning and pollution. Only a moisturiser will feed the skin to replace lost lipids. TRY: Darphin Hydraskin rich £31.

Redness and blotches are often a problem in winter. To protect skin, replenish every morning and evening with a rich cream and add an oil or balm to your routine to provide extra nourishment. Your skin is most active during the evening, so apply product before you go to bed to continue to regenerate and replenish your skin while you sleep! Concealer will not only reduce the appearance of skin redness but also act as a barrier between your face and the cold. Have an at-home spa night. Long, dark evenings are ideal for pampering, so light candles and unwind in a warm bath. What trends have you seen in 2011?

Trends are so specific to the fashion and music that people like. Whilst working in New York, London and Paris, we worked on such a variation of shows that it is hard to pinpoint a specific trend. For example, Pam Hogg did a show in Paris that revolved around latex, whilst Mara Hoffman’s show in New York was all about beautiful printed fabrics. Mark Fast, on the other hand featured some amazing new clothing and pattern cutting technology in his futuristic styles. On the hair front, ponytails were very strong, and the use of gels and oils too.

What trends do you envisage for 2012?

The ponytails, oils and gels from 2011 will follow through onto the high street. Catwalks are always six to twelve months ahead of high street fashion. Wet-look products to slick hair down are very big at the moment. That androgynous look is coming through very strongly and will continue into 2012.

You’re a regular at fashion weeks all over the world, and have styled some very high profile shows at London, Paris and New York this year. What’s your secret to success at a catwalk show?

I think it’s really important to know your place. I’ve assisted some amazing session stylists and I try to make their lives as easy as I can. I’m a link in the chain and I just do my best to keep it going. I work well under pressure. To some people it’s just hair, but these guys are sometimes under masses of pressure and it’s really important to be alert. It’s a fantastic place to be and has its own pulse. People all pull together to put on these beautiful shows. Preparation also plays a massive part. Before every show I clean my brushes, sort my clips and bands into colour and size order and make sure all of my electrical kit is in good working order. The key is team strength. Know your weaknesses and leave your ego at the door.

Few people have time to get salon-worthy hair of a morning. What tips do you have for everyday hair management?

I think the general public underestimate the power of a very good haircut. A

hairdresser can make your life so much easier by adding layers or maintaining a healthy weight. My team and I have a philosophy that hairdressing is no different to architecture. There are beautiful buildings and ugly buildings: either way, a building must have a certain criteria, good foundations and even weight distribution. My clients are always saying to me, ‘I wish I could do my hair like you do’. Hairdressers can do things to your hair that you can’t usually because of the products that you use at home. We use professional only shampoos and conditioners – which are the foundations for any good style and help with the health of your hair. Then we use a lotion or cream to create the style, and finally a spray to help add shine or to fix the style. Approximately one in ten women buy a professional product for home: that’s why so many women struggle to style their hair in the way that their hairdresser does.

You have a fabulous team of stylists, colourists and technicians behind you. What do you look for in a Bad Apple team member?

My business partner and I created a brand presentation for our current team members. We then integrated that into

our interview process. You can teach skill and knowledge but you cannot teach a good attitude. All of my team have a great attitude towards their jobs.

What is the reasoning behind your trademark cap?

For some, it’s shoes and handbags. For my business partner, it’s coats. For me, it’s simply a cap.

What do you have coming up for 2012?

I’m a big believer in fate and therefore don’t want to disclose too much before it has happened. However, I can confirm I will be teaching throughout the UK in 2012. I’ve also had a telephone call from one of the biggest session stylists in the world to assist him on some shoots and fashion weeks in Paris and Milan. Also, my business partner is in negotiations about opening a Bad Apple Hair in London. Watch this space.

Top five moments of 2011 …

1. Opening our first franchise. Our franchisee is as passionate about delivering great hair and service. For me it was a no brainer involving Michaela (our franchisee) into the Bad Apple family.

2. New York, London and Paris. Can you imagine it? 15 years in

hairdressing and then, in just one month you get to achieve your lifelong dreams.

3. Winning the men’s regional L’Oreal colour trophy. It wasn’t me this year, but two of my teammates. For me, this was a rubber stamp that we do employ some of the best hairdressers in the city, if not the country.

4. Kevan and Harry getting on two nationwide teams with L’Oreal and TIGI. This was the third year we had been successful in securing a place on Inspirational Youth and, the first time we had a Bad Apple on the L’Oreal evolution team.

5. I have a cutting program called Balance that I teach the staff at Bad Apple Hair. It is basically nine templates of section patterns that can be cut at ten different lengths to make up to 90 haircuts. I presented this to the worldwide Creative Director of TIGI mid 2011; he liked it and subsequently I have been invited back to discuss running the course around the UK in 2012.

SB: What is your involvement in this Selfridges event?

JJ: I want to get the man’s view on fashion. It’s quite nice to hear about men in the industry, men which other men look up to, expressing and admitting that they have an interest in fashion. Men should take care of themselves!

SB: Channel 4’s T4 often looks like organised chaos. How much fun is it to present?

JJ: So much fun! It’s constant madness! If you think about the age group we are tending to, they are young and energetic with short attention spans. You have to keep going with it. I love it. The best blag I have even accomplished was getting that job. I was an English teacher and just wanted to go along and hoped to see someone famous. I already had a job so think I came across really relaxed and carefree; they liked that and I got the job.

SB: You’ve been very outspoken about the importance of body confidence. What do you think about airbrushing celebrity pictures?

JJ: I hate it. It gives people such high expectations, which are inevitably out of reach and can cause deeper issues.

SB: You’ve become a style icon, but you don’t use a stylist. Why is this?

JJ: I love to style myself; it’s what makes me ‘me’. I also do my own makeup, unless I’m doing TV, for example.

SB: You’re known for your vintage style. What do you love about 50s and 60s fashion?

JJ: It’s when women weren’t scared of looking like ‘women’; very feminine and beautiful fashions. Other fashions have included male influenced trends, big

shoulder pads, for example. Women should celebrate what makes them women.

SB: Where do you like to shop?

JJ: I’m not restricted by brands; I buy what suits me. I like vintage, but I don’t always have the time to buy from vintage stores. Lately though, the high streets are offering vintage styles.

SB: What’s coming up for you in 2012?

JJ: 2012 is very exciting for me. I’m hosting a new series of Playing it Straight where contestants have to avoid choosing gay dates, who are literally ‘playing it straight’ in a bid to win a cash prize.

SB: Who’s on your wish list of celebrity interviewees?

JJ: Beyonce. I love her! My favourite person who I have ever interviewed is Johnny Depp.

SB: You design your H! range for Debenhams. What do you think of the recent collaborations between Selfridges and Primark and also Versace and H&M?

HH: I think the Versace collaboration is a really good example. I love it; it’s really archetypal pieces, yet it’s identifiable as Versace. Donatella has recreated the brand for a more accessible audience. I don’t know what the big hoo-ha is about Primark. It’s a massive store, and I think Selfridges is big enough to cater to all different markets. Seeing how many people wear my H! range at Debenhams is so important. It keeps you involved.

SB: Did you predict the huge trend that the Henry Holland suspender tights became, thanks to celeb fans Rihanna and Girls Aloud’s Nicola Roberts?

HH: I’m always surprised! The hardest thing to do is follow a hit. You never know what will work. Like with the slogan t-shirts, we never predicted how big they would become. Our collections as a whole are building momentum and people are now realizing that we also make dresses and jeans. But yeah, the suspender tights took everyone by surprise.

SB: How has your friendship with Agyness Deyn affected your career?

HH: When I first designed my t-shirts, Agyness was still starting out as a model. I lived with her, so if I needed a model for my t-shirts she would always be there to do it. It just so happened at the same time that she became a big deal.

Why did you choose to open a

steakhouse in Birmingham?

I never seek opportunity. I’ve always

waited for opportunity to cross my

path. I don’t say yes to everything. If

I’m honest, I say no to most things

because very few things capture my

imagination.

I remember the first time I came to

Birmingham, about 25 years ago and

it reminded me very much of the town

I grew up in, Leeds, very working

class and very industrial. I came back

to Birmingham many years later

to do a book signing in Selfridges,

and I noticed how Birmingham

was changing, how the people of

Birmingham were changing. When

I was asked if I would consider The

Cube, I felt that it was my time to

come to Birmingham. The people of

Birmingham are opening their arms to

people like myself. It’s quite amazing

what your city has achieved. I feel

very privileged that I’ve been given the

opportunity to do the restaurant at

The Cube.

I started thinking about steakhouses

about three or four years ago. When I

was a kiddie, every Friday night when

my father came home, he brought

with him three pork chops, a slice of

kidney and a sirloin steak for him.

The benchmark, in my opinion, for

all restaurants is a great steak. The

working man will put his hand that

little bit deeper into his pocket for a

good steak. A steakhouse gives you

exactly what it says on the menu.

It’s as simple as that.

From where are you sourcing your

meat?

Scotland. English beef is very good but I

find it a bit inconsistent. Scottish beef is

very consistent; it’s never let me down.

What is different about your new

restaurant in comparison to others

in Birmingham?

For many years, I worked in the

industry of Michelin starred

restaurants. I like recognisable dishes;

I don’t like all the fuss. I wanted to

create something for the people of

Birmingham, not just a certain sector

of people. I’d like to think that there is

something for everyone on our menu,

at a price that they’re happy to pay. The

most important aspect of a restaurant,

in my opinion is the environment you

sit in. If you feel comfortable, you

can start to enjoy yourself. How

many times have you been to a

restaurant where the food has been

delicious but the environment and

the ambience have ruined it? What

I try to do with my restaurants is

create environments for everyone, so

nobody’s intimidated and everyone

can afford it. I very rarely dine

outside of my own restaurants. By

sitting in my own establishments,

I know what’s happening. My

customers see me there endorsing my

own product, not somebody else’s.

That’s very important.

What is your favourite dish?

I like simple food. I don’t like food

that’s been messed around. Most

chefs create pictures on a plate to

hide their lack of technical ability. If

you go to the truly great restaurants

in the world, they have the ability

of presenting food very simply and

cooking it to perfection. I was taught

as a young boy that perfection is just

lots of simple things done well. It’s as

simple as that. I love a good roast with

perfectly cooked Yorkshire puddings

and perfect roast potatoes. If we’re

all honest, the food we really love is

very simple. We all love a good steak;

we all love a prawn cocktail; we all

love a baked potato with butter. It’s as

simple as that.

You famously gave back your

Michelin stars. Why did you do

this?

When I was a child, I had a dream

of winning three stars and five red

knives and forks, as

all the great French

restaurants have. There’s

only one restaurant in

Britain today that has

five knives and forks,

and that’s the Ritz, who

unfortunately have no

stars. In 1995 I won my

three stars, and in 1998 I

got my three stars with

five knives and forks. I

had achieved everything

that I had wanted to

achieve as a young

man. I had realised my

dream. When you have

a dream, you have a

responsibility to turn

it into a reality. After

22 years of working six

and seven days a week,

I decided I’d done my

bit. It’s a young man’s

game. So, I told Michelin

on 23 December 1999

that I was retiring

from the stove. You

have to remember that

you’re being judged by

people who have less

knowledge than you.

The day I realised that

was the day I realised

that three stars in Michelin meant

very little. That’s what gave me the

courage to hand back my status.

People often feel intimidated

when they first meet you. Is this

intentional on your part?

It’s interesting when people meet me for the first time as they’ve

generally formed this opinion of

me without actually meeting me.

As I’ve said many times in my life,

most of my reputation is a product of

exaggeration from ignorant people.

I’m quite a straightforward bloke. I

don’t try to intimidate people. Some

people may feel intimidated by me,

but I don’t do that to them, they do

that to themselves.

What piece of advice would you

give a young chef today?

When I left Yorkshire and travelled

to London, I worked in La Gavroche.

That was intimidating. It was an

all-French kitchen, bar one other

man. I’d been there about five days

and I was really struggling when

Albert Roux called me into the office.

I thought I was going to get the sack.

The door closed, he picked up his

packet of Benson and Hedges and he

gave me one. He said to me: ‘Marco,

you can cook as well as anybody in

this kitchen, if not better. Dissolve

your fears of the stove.’ That’s what

I did. The next night, I attacked the

stove, dissolving my fears. If you’re

intimidated or fearful of the stove,

you’ll never cook. That was the

greatest piece of advice anyone ever

gave me. It’s as simple as that.

What to do:1. Heat the oil in a wok or frying pan and then gently sauté the onion, ginger and garlic for about 5 minutes until it has softened but not coloured. Stir in the curry paste and chicken, and cook for about 1 minute.

2. Stir in the pumpkin or butternut squash, and then add the fish sauce, coconut milk and 200ml water. Bring to a simmer and cook uncovered for 15 minutes.

3. Add the Tenderstem, baby corn and spring onions to the curry and continue to cook for about 5 minutes until the vegetables are tender. Finish off by stirring in the lime juice and coriander before serving with Thai rice.

Tip: If you are using another brand of curry paste, check the instructions for the recommended quantity to serve 4 people.

What to do:For the pastry tarts, place the flour in a bowl and rub in the butter until it resembles breadcrumbs. Add the curry powder and poppy seeds then enough water for it to come together to form firm dough. Leave to rest in the fridge for 10 minutes.

Dust a work surface with some plain flour then roll the pastry out thinly then divide between 4 individual tart cases. Prick with a fork then bake blind for 8 minutes until golden and crisp.

For the rarebit, place the Lancashire cheese, stilton and milk into a casserole pan and heat slowly until the cheese melts. Add the flour and breadcrumbs and cook out for 1 minute until the cheese thickens and comes away from the edge of the pan. Remove from the heat, cool slightly then place in a food processor. Add the egg yolks, mustard and Worcestershire sauce and blend until smooth.

For the sticky shallot filling, heat the olive oil and fry the bacon until golden, add the chopped shallots, garlic and honey and cook on a low heat for 5 minutes. Stir in the shredded spinach and season to taste. When ready to serve divide the shallot mixture into the 4 tartlet cases, reserving some for garnish, pour the rarebit over the top of the filling, ensuring it covers the whole tart. Bake in a hot oven for 5 minutes. Finish off under a hot grill until glazed and golden.

Serve with some mixed salad leaves and a simple vinaigrette.

Bar Room Bar is located on the prestigious canal side gallery at The Mailbox. Serving a great selection of bar snacks and cocktails, Bar Room Bar is a trendy eaterie frequented by the stylish and the styled.

For a Thursday night, the atmospherically small bar was very busy. It’s obviously a prime place for a post-work drink. Glancing around the freshly redecorated establishment, the well-chosen stylish décor provides a comfortable yet chic ambience. Relax in one of the seating booths that allow you to enjoy a private meal for up to six people, but with just one move of the head you can be right back in the throng of the party.

Not big starter eaters, we opted for a dish of mixed olives marinated in chili and garlic (£2.95). For mains,

I chose to try the chili con carne quesadilla with Taw Valley mature cheddar and sour cream (£5.95) and my dining partner chose the Wasabi spiked handmade beef burger topped with wasabi mayonnaise, cucumber, spring onion and fresh coriander (£7.95). Two portions of fajita spiced potato wedges (£1.35 each) were ordered as our sides. To swill all of this down, I went for a glass of Trebbiano Chardonnay (£4.35 glass, £12.75 bottle) while my fellow diner enjoyed a pint of San Miguel (£3.65). The quesadilla was very tasty and, unlike most meals I order, just the right amount. The slightly spicy chili was modestly accompanied by the Taw Valley cheddar, and would be perfect for a lunch as well a dinner. The waiter warned of the spiciness of the wasabi burger, but we

were pleasantly surprised. More like just a slight kick. The wedges, on the other hand, packed quite a punch.

Don’t be put off by the trendy clientele. Although it is a post-work beverage server for the suited city centre worker, couples, families and mature folk are more than welcome.

Be aware: I later discovered that Thursday is in fact 2-4-1 cocktail night. Great if you want cheap cocktails, but gets busy if you’re eating.

The cosy and ambient restaurant, traditional décor of rich red- gold walls, deep burgundy seating, sturdy fireplaces and original beams give The French Grill at The Belfry a real classical feel. Antonia the restaurant Manager and the friendliness of his team immediately made us feel right at home.

A bottle of Errazuriz Chilean Cabernet Sauvignon (£25) was recommended as the perfect accompaniment for what is an extensive meat-eater’s menu (although they do offer a good selection of vegetarian options) the wine was presented with

a delicious fresh bread selection, with olive tapenade and balsamic dip.

With three of us dining we each chose something different; for starters beautifully presented crispy duck with mooli carrots and hoi sin (£6.95), succulent crispy pork rilette with apple puree and crackling (£5.75) and pea soup dressed with pancetta (£5.50), all polished off with eating only disturbed by murmurs of respectful adulation for each dish.

For mains we ordered from the grill, English shorthorn fillet (£24.95), Yield Field Farm cote de beouf (£22.95) served with fat cut chips,

garnish and a choice of sauces; we both opted for the peppercorn. The third diner selected from the stove; seared sea bass with fennel and chili salad, soy and lime dressing with a side of grilled courgette with Parmesan. The fish diner was offered (and accepted) a glass of Sauvignon Blanc as an accompaniment. All dishes were presented with military precision and the two different steaks perfectly cooked and by far the best we’d ever tasted; tender, perfectly seasoned, succulent with mature flavours layered deep into the cut; both were said to melt in the mouth.

The fine rich peppercorn sauce, although tasted great, these steaks really didn’t need anything to enhance their flavour. The sea bass was perfectly cooked, moist, and boneless, flaked away and combined perfectly with its dressing and side.

Decadence was last on the menu with two of us opting for a devilish dark chocolate fondant (£5.95) – gorgeously thick, rich and heavenly – and classic crème brulée with spiced Madeleine’s, perfectly cooked and as it should be.

Our verdict? A treat for meat lovers, we can certainly recommend a visit and the perfect ambience for a catch up meal with close family and friends. Long live the French!

Arthur Miller’s horrifying 1952 dramatisation of the witch trials that tore apart Salem in 1692 provides a terrifying interpretation of the events in the Province of Massachusetts Bay. The title of the play is a pun referring to the struggles faced by the citizens of Salem and the mix of religious and secular aspects of society. Ten of Leonardo da Vinci’s finest drawings in the Royal collection are touring to be shown at five venues across the UK, stopping off at Birmingham Museum and Art Gallery. The drawings have been selected to reflect da Vinci’s use of different media and the extraordinary range of his skills in painting, sculpture, engineering,

botany, mapmaking, hydraulics and anatomy. The exhibition includes designs for chariots fitted with flailing clubs, a study of the head of Leda, a drawing of oak leaves, a double-sided sheet of anatomical sketches, a design for a scheme to drain marshland, a view of a river from a window, a costume study of a man on horseback, drawings of apocalyptic scenes, and a rough study of an old man in profile, one of the last drawings made by the artist. Admission to the Museum and Art Gallery and the exhibition is free.
